Vanilla Coffee Smoothie Bowl

Starting the day with two faves: Coffee + smoothie.

Wake up well with this is another dessert-like smoothie—you can’t beat the classic combo of bananas and peanut butter!

The trick to making this the creamiest smoothie bowl is blending in chia seeds and Medjool dates soaked in almond milk. i topped this bowl off with homemade granola, coconut shavings and blueberries, making it a perfect bowl.

Vanilla Coffee Smoothie Bowl

1 frozen banana
1/2 cup unsweetened almond milk
1 tablespoon natural peanut butter
1 tbsp chia seeds
2 tbsp hemp seeds
3-4 Medjool dates, soaked and pitted
1/4 cup frozen caulirice
1 teaspoon vanilla extract
1 scoop Moon Juice Vanilla Mushroom Adaptogenic Protein
4-5 ice cubes

Toppings:

2 tbsp granola
2 tbsp coconut shavings
1/4 blueberries

The night before, mix chia seeds and plant milk in a small bowl. Let sit, covered, in the refrigerator overnight.

Combine the ingredients in a blender and blend until smooth, about 2 minutes or until smooth. Add a splash of extra almond milk as needed.

Soaking the dates beforehand in hot water will help with making this smoothie smooth. If not, you may have visually small pieces of dates within the shake. That’s ok, those little chunks are caramelly and delicious!
