It’s a one-bowl pantry-staple recipe, and you get the bonus of having a delicious homemade dessert or snack for the rest of the week ahead with wholesome ingredients.
These are actually a perfect snack due to the fact that they are sugar-free, plant-based, high in fiber, and is essentially just made of nuts and cacao.
Dark Chocolate Chip Cookie Dough Bites
Makes 10 Balls
What You’ll Need
1 cup peanut butter
4 tbsp coconut flour
3 tbsp mesquite powder
1/4 cup coconut oil, melted
20 drops liquid stevia or 1/2 tsp monk fruit
1/2 tsp vanilla extract
1/4 cup cacao nibs
3 tbsp cacao powder powder
Coconut shavings, unsweetened for rolling
What You’ll Need To Know
Combine all ingredients, except the coconut shavings, in a bowl and mix into a dough with your hands. If the mixture is too wet, continue to add more coconut flour until it’s dry enough to roll into balls.
Place in the fridge for 30 minutes to harden slightly.
Remove from the fridge and roll into 10 balls.
