Masala Chai (Plant-Based)

I'm not going to lie, I'm not a tea person, but when it comes to Masala Chai, that is a whole nother story. The warm, cozy tea is full of spices and steamed milk for the coziest drink of all time. It's a hug in a mug. I'm sharing with you a recipe I learned Udaipur a couple of years ago. Please note, this recipe, although plant-based, it is not vegan. To do so, simply swap out the honey for your sweetener of choice.
Masala Chai (Plant-Based)
Plant-based, Vegetarian, Dairy-Free
What You'll Need
6 whole peppercorns
2 cinnamon sticks
8 cloves
12 green cardamom pods
4 inches of ginger, cut into thin rounds
3 cups of water, room temp
3 cups oat milk, room temp
3 tbsp honey
2 - 3 tbsp good dried Assam black tea
What You'll Need To Know
Add all of the whole spices to a mortar and pestle and crush into large pieces.
Bring a stovetop pot up to a low-medium heat. Add the crushed spices and toast for about 2 minutes. Then add the ginger and continue toasting for another minute until the spices start becoming very aromatic.
Add water and milk to the pot, stir and bring up to a light simmer. This should take about 10-15 minutes. Remove from heat when the liquid simmers.
Add the honey (or sweetener of choice) and stir to combine. Then add the black tea and stir. Let it steep for about 4-5 minutes depending on how strong you like your chai.
Pour the chai through a strainer to catch all of the whole spices. Serve warm or let cool and store in the fridge to serve over ice. Enjoy!
