A bit messy though these Portobello Buns make for a perfect alternative to bread or if you are looking for some added meaty plant-based bread alternative. My diet is mostly plant-based, and Portobellos are a staple in my diet. They are very versatile and absorbed virtually any flavour.

I love this recipe simply because the portobello mushrooms make for a great swap for bread. Since I have a gluten intolerance, I can’t exactly enjoy a good slice of bread or rustic baguette; and I’m not a big fan of gluten-free bread. There is something unfulfilling about it.

This Portobello Bun Sandwich features veggies sandwiched between portobello mushrooms, which also makes it so satisfying! You can use nearly any sort of ingredients to sandwich together.

In the past, I’ve cooked the portobello in the oven, which turn out great! For this recipe, I used my new favourite kitchen tool: the air fryer!

Air Fried Portobello Buns

What You’ll Need

2 portobello mushrooms
1 tbsp coconut oil
1 tsp garlic powder
Black pepper, to taste
Pink salt, to taste
1/2 cup arugula
4 grape tomatoes, sliced
1/2 small avocado, sliced
2 thin red onion slices
2 radish
2 mini sweet peppers

Topping: Trader Joes Everything Bagel Seasoning

What You’ll Need To Know

Preheat air fryer 400°F for 2 mins. In a bowl, combine the coconut oil, garlic, salt and pepper.

Brush to coat portobello mushrooms. Add portobello caps, and let them marinade until ready to grill the meat. Air fry mushrooms face up at 400°F for 7 mins.

Remove mushrooms, face up adding ingredients and sprinkle seasoning on top.
