Do you soak chanterelle before cooking?
The answer to that question can be both yes and no, depending on the recipe. Soak times may vary from 10 minutes to an hour, or none at all! Certain recipes call for soaking chanterelles in water or dry brushing them with a pastry brush to remove dirt. It is important to remember that a quick rinse with lukewarm water will do absolutely nothing to remove any dirt. Therefore, make sure to read through your chosen recipe beforehand in order to determine whether it calls for soaking before you begin cooking. Do keep in mind that whatever you do while preparing, soaking chanterelles doesn't take too much effort and can be beneficial as it can help mushrooms retain flavor as they cook.
