Avocado Jicama Tacos

Jicama Tortillas? Yes, that’s right!

One ingredient.

No cooking required.

And this shell stays crispy without falling apart.

The taco shell is made entirely from thinly sliced jicama, making them delicious low-carb tortillas for tacos and enchiladas made with jicama. You can eat them raw for a crispy texture, steam them if you like a softer tortilla, or lightly pan-fry them for a minute on each side for a crispy crunch. These are grain-free tortillas that are low carb and vegan-friendly.

If you haven’t tried jicama before, it looks similar to a potato but is sweeter and much lower in carbs. They can be eaten raw, steamed or fried with a little oil in a skillet. You can even make them into jicama fries.

Growing up, tortillas were eaten at almost every single meal. And, while this recipe might now be your typical street tacos, it’s really delicious! This recipe is a great take on a simple, yet nutritious meal featuring avocado, lemon-infused EVOO, edible flowers and Hamama microgreens and my favorite Everything Bagel seasoning.

Avocado Jicama Tacos

What You’ll Need

Jicama Tacos

1 Jicama
3 medium Avocado
Lemon-Infused EVOO
Edible Flowers (optional)
Microgreen Sprouts

Everything Bagel Seasoning:

2 tbsp poppy seeds
1 tbsp white sesame seeds
1 tbsp black sesame seeds
1 tbsp plus
1 tsp dried minced garlic
1 tbsp + 1 teaspoon dried minced onion
2 tsp flaked sea salt or course salt

What You’ll Need To Know

Jicama Taco Shells: Cut off the ends of the jicama, so they are wide and flat. Peel the jicama skin using a peeler or paring knife.

Use a mandolin to slice the jicama into really thin tortillas. Try to use the thinnest setting whenever possible to get the best results. If your jicama is too large, it might not fit on the mandolin. 1 medium sized Jicama will yield about 9-12 slices, depending on the Jicama size and the thickness of your slices.

Everything Bagel Seasoning: In a small bowl, combine the poppy seeds, sesame seeds, dried garlic, dried onion, and salt. Stir until well combined. Store in a sealed jar or container.

Tacos: Peel and slice your avocados and top the tortilla with 1/2 of an avocado. Drizzle with EVOO and sprinkle in Everything Bagel Seasoning. Top with edible flowers and Microgreen Sprouts and enjoy!
