I have found that translation cards come handy, and are essential to gluten-free travel.  Gluten-Free Passport has compiled various gluten-free dining cards, phrases and a multi-lingual phrase guide to help you during your journeys. They are an easy way to connect the communication gaps and speak openly about your gluten-free requirements. Personally, I have used these in France and in Turkey while dining out; most restaurant staff are happy to comply.
