2 cups pitted (medjool) dates
1 cup water to soak

Soak dates for at least 2 hours (more if you have the time!).
Pour into a strainer to get rid of the access water.
Transfer to a high-speed blender or food processor and blend until smooth. Add water as needed if the paste becomes too thick.
Notes: Use organic when possible. Any (pitted) dates will do!
