Sweet Potato Pumpkin Ombre Layered Smoothie

Happy Halloween, friends!! I'm enjoying the morning with these Sweet Potato Pumpkin Ombre Layered Smoothies. They sort of look like candy corn! I bet you never thought about adding sweet potatoes to your smoothie, right? You can slurp this smoothie down for breakfast or dessert or anytime. They are filled with tons of nutrients and delicious flavor.

What You'll Need

1/2 cup medium sweet potatoes, peeled, boiled and mashed (then chilled)
1/2 cup pumpkin puree
1 1/2 cups cold unsweetened coconut milk
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 tablespoon coconut cream fat
1 scoop protein (I used @PerfectFit vanilla)
4 ice cubes

Toppings:
coconut shavings
bee pollen

What You'll Need To Know

1. Blend all ingredients, except coconut cream fat and reserving 1/2 cups coconut milk. Fill glasses about 1/3 of the way. place cup in freezer for 5 minutes for the top layer to harden.

2. For the second layer, add 1/4 cup coconut milk and 1/2 tablespoon of coconut cream fat to the blender and blend and pour about 1/3, and return back to the freezer for 5 more minutes.

3. For the third layer add the rest of the coconut milk and coconut cream fat and blend.

4. For the top layer and sprinkle with coconut shavings and bee pollen.

Recipe makes 2 servings.

Avocado. Zucchini. Coconut. Layered smoothie? Okay, I know what you're thinking... that sounds tucking weird! But, trust me on this! It tastes really yummy! You can't even taste the zucchini in this.

Layer 1:  small avocado, zucchini, coconut cream, stevia, all natural unsweetened peanut butter, unsweetened cashew milk

Layer 2: kiwi, thinly sliced

Layer 3: small avocado, zucchini, coconut cream, stevia,all natural unsweetened peanut butter, unsweetened cashew milk, spirulina

Layer 4: coconut flakes

In a high-speed blender add 1 small avocado (100g), 1 tablespoon coconut cream, 3 drops stevia,  1 tablespoon all natural peanut butter, 1.5 cups unsweetened cashew milk, 3 ice cubes and blend for 30-60 seconds. Pour half of the mixture into 1 cup and set aside. Add 1 teaspoon spirulina to the remaining mixture and blend for 30 seconds. Divide mixture into 2 cups and place in the freezer for 10 minutes. Peel and slice 1 kiwi and place around the glass of the smoothie cups. Add the third layer of the mixture you set aside and return to freezer for 10 more minutes. Once ready, add 1 tablespoon coconut flakes to each. Enjoy!

2 cups unsweetened cashew milk
3 ice cubes and blend for 30-60 seconds
1 kiwi
1 small zucchini
2 tablespoon coconut flakes

What You'll Need To Know

1. In a high-speed blender add 1 small avocado (100g), 1 small zucchini (sliced), 1 tablespoon coconut cream, 3 drops stevia, 1 tablespoon all natural peanut butter, 1 zucchini, sliced, 1.5 cup unsweetened cashew milk, 3 ice cubes and blend for 30-60 seconds.

2. Pour half of the mixture into 1 cup and set aside.

3. Add 1 teaspoon spirulina and 1/2 cup unsweetened cashew milk, to the remaining mixture and blend for 30 seconds. Divide mixture into 2 cups and place in the freezer for 10 minutes.
 

4. Peel and slice 1 kiwi and place around the glass of the smoothie cups for the second layer.

5. Add the third layer of the mixture you set aside and return to freezer for 10 more minutes.

6. Once ready, add 1 tablespoon coconut flakes to each. Enjoy!

Upping my smoothie game with this Avocado-Coconut Ombre Layered Smoothie! These pretty, ombre layered smoothies have been a favorite of mine this past Summer. And, I’m sure they’ve been flooding your Instagram, too. They've got layers and depths of flavor and are obviously very attractive. Surprisingly, they are really easy to make; they just require a bit more wait time.

Layer 1: frozen supergreens mix (baby spinach, baby kale, baby chard), avocado, coconut cream, stevia, unsweetened cashew milk, spirulina, cinnamon

Layer 2: avocado, coconut cream, stevia, unsweetened cashew milk, mint leaves, cinnamon

Layer 3: avocado, 1/2 tablespoon coconut cream, stevia, unsweetened cashew milk, mint leaves, vanilla, cinnamon

Layer 4: gr8nola, coconut flakes

In a high-speed bender add 1/2 cup frozen supergreens mix (baby spinach & baby kale), 1 small avocado, 1 tablespoon coconut cream, 3 drops stevia, 1 cup unsweetened cashew milk, 1 teaspoon spirulina, 1/4 teaspoon cinnamon and blend for 30-60 seconds. Pour half of the mixture into 2 cups and place in the freezer for 10 minutes.

2. Without washing the blender, add 4 mint leaves, 1 drop stevia, and 1/4 cup cashew milk and blend.

3. Add layer to the cup and return to freezer for 10 more minutes.

4. For the third layer add 1/2 tablespoon coconut cream, 1 cup cashew milk, 2 mint leaves, 2 drops stevia, 1 tablespoon coconut flakes, a dash of cinnamon and blend. Add the layer to the cups and return to freezer for 10 more minutes.

5. Once ready, add 1/8 cup gr8nola to each. Enjoy!
